Every hospitality brand has a story. This event is about telling it well.

Hosted at To Be Frank in Collingwood, the morning brings together practitioners from design and hospitality to discuss what it takes to build something people connect with.

Mathilde Delatte of Belleville Studio led To Be Frank’s rebrand. She joins co-founder Lauren Parsons to trace the process of translating values into a tangible experience and visual identity.

Ania Benhamadouche of Bistrot Media brings the marketing perspective: practical, strategic and grounded in the realities of the hospitality industry.

Attendees will examine their own narratives through guided exercises, leaving with practical tools they can apply directly to their work. The morning closes with an open Q&A, coffee and a special Design Week pastry from To Be Frank.

This session will be moderated by Simon Winkler of Good Question.

Mathilde Delatte
Mathilde Delatte has over fifteen years’ experience taking brands to their fullest expression through concept-driven design. Starting her career in Paris and London, she brought her distinctive style and approach to some of Europe’s most innovative agencies, creating work for iconic brands. Having lived in Australia for several years, she continues to collaborate with a diverse network of creatives at Belleville Studio across branding and design within the hospitality and lifestyle sectors.

Lauren Parsons
Co-founder of To Be Frank Bakery, Lauren Parsons transitioned from a fifteen-year career in the pharmaceutical industry into hospitality alongside her partner Franco Villalva. Since opening in December 2019, Lauren has played a central role in the business, managing finance, HR, front-of-house operations and marketing, helping grow the team from four people to thirty-one across two locations.

Ania Benhamadouche
From the chic streets of Paris to the vibrant shores of Sydney, Ania Benhamadouche, director of Bistrot Media, brings over ten years of marketing experience to Australia’s dynamic hospitality scene. Having worked behind the scenes with a range of restaurants, from new brands to established venues, Ania has a deep understanding of the industry and knows how to create strategies that connect with foodies across Australia.

Simon Winkler
Simon Winkler has spent two decades in conversation with Australian music and media. He has broadcast with Triple R, SBS and ABC, and facilitated talks for a range of arts and cultural organisations. As co-founder of Good Question with Lauren Taylor, Simon runs practical workshops for podcasters, media makers and professionals who want to go deeper with their interviews. His skill in listening is built on a career speaking with artists and hosting live events.
