Once an architect at Kerstin Thompson Architects and now a chef and restaurateur, Audrey Shaw sees little difference between the kitchen and the studio. In both, every ingredient and every decision is considered with care, allowing something layered and memorable to unfold over time. For this special Melbourne Design Week event, closing out a busy weekend, join Audrey for a cocktail-hour conversation with curator Timothy Moore reflecting on her journey between disciplines: and what architecture continues to teach her about hospitality, creativity and craft.

Audrey Shaw
Audrey Shaw is a Melbourne-based chef and restaurateur, and a former architect whose design sensibility continues to shape her approach to food. She is the owner of Carnation Canteen in Fitzroy, and Bar Carnation in Carlton North, a reimagining of the former Gerald’s Bar site. Shaw’s cooking is defined by an ingredient-led philosophy and a commitment to seasonality, expressed through frequently changing menus. Across both restaurants, Shaw brings an architectural attention to detail, evident not only in the food, but in the spatial and material qualities of her venues, positioning her as a distinctive voice within Melbourne’s contemporary dining scene.
Timothy Moore
Dr Timothy Moore is Curator of Contemporary Design and Architecture at the National Gallery of Victoria (NGV). He is the founder of Sibling Architecture, and Associate Dean (Engagement) at Monash University’s Faculty of Art, Design, and Architecture.
